The UK food manufacturing industry prepares food products ready for sale and consumption. This involves sourcing ingredients, processing the food, preservation and packaging as well as product research and design, taste testing, and marketing.
Food and drink manufacturing is a major part of the food chain which comprises agriculture and fishing, food and drink manufacturing, distribution and warehousing, wholesaling, retail, foodservice and catering.
Food hygiene laws will affect all food businesses, including caterers, primary producers (such as farmers), manufacturers, distributors and retailers.

Catering Equipment
Catering equipment needs to be cleaned and disinfected properly to remove harmful bacteria from equipment and surfaces and help reduce the risk of cross contamination and food poisoning.
Premises, equipment and utensils, which have not been effectively cleaned and disinfected, accumulate harmful bacteria and can contaminate food.
Cleaning by traditional methods i.e. water and detergent often leaves dirt in the pores of the surfaces therefore encouraging bacteria.
High temperature steam cleaning is needed to reach the organic materials deep down below the surface. The dead organisms even in the innermost pores can then be removed by using water and micro fibre cloths. New germs cannot find a proper ground to grow.
Food Preparation
It is vitally important to keep all areas used for preparing food scrupulously clean.
The Food Standards Agency provide advice and guidance on food safety.
A food safety management pack has been developed by the Food Standards Agency to help small catering businesses such as restaurants, cafés and takeaways comply with the regulations.

Vapour steam is ideal for cleaning food preparation areas
without chemicals. The high temperature steam reaches the organic materials deep down below the surface.
It can be used to clean counters, remove grease from cooking surfaces, oven doors and grill hoods, clean tiles and grout in kitchen areas and remove baked on grease from pots and pans.
Where there are large areas of flooring to keep clean a scrubber dryer could prove useful. These machines scrub the floor using a combination of water, detergent and brushes and then dry it using squeegees and vacuum.
Food Processing
Consumer demand for a wide selection of ready-prepared foods and a longer shelf life for food has led to a vast increase in food processing.
Most foods go through some form of processing before they reach our table. Traditional methods which have been used for centuries include sun-drying, smoking, pickling, salting, fermentation, freezing, pasteurisation and sterilisation. These processes are now joined by many new ones including chemical preservation.
